Mandorla & Cranberries


Sono già al riciclo.
Diciamocelo, non è un segreto che io sia una blogger disastrosa.
Del resto arrivo persino ad auto-citarmi, alla Hitchcock, specchiandomi nell'acciaio inox mentre fotografo questi dolcetti. Dilettante.
Avevo realizzato questo stesso impasto celiaco-friendly sotto forma di tartelette, ispirato ad una ricetta tratta, se non ricordo male, dal libro Christmas di Donna Hay.
Questa volta sono risultati quattordici pasticcini in formato muffins, arrivati semi-ignorati in ufficio per festeggiare tardivamente il mio compleanno, con queste proporzioni :

- 150 g. burro

- 100 g. zucchero semolato
- 2 uova + 2 tuorli
- 3 cucchiai farina di farro
- 250 g. farina di mandorle (ho usato mandorle tritate al momento, con poco zucchero)
- 90 g. c.ca mirtilli rossi (cranberries) canditi
- 1 cucchiaino di estratto di vaniglia
- 2 cucchiai zucchero a velo
- pizzico di sale

Tritare le mandorle con poco zucchero, mescolarle alla farina di farro, mettere da parte.
Montare a neve le due chiare col pizzico di sale, mettere da parte.
Sbattere i tuorli con lo zucchero fino a renderli spumosi, aggiungere il burro e montare.
Unire le mandorle mescolate alla farina di farro, e la vaniglia. Mescolare bene.
In ultimo, con una spatola, incorporare le chiare col collaudato movimento dal basso verso l'alto, ed aggiungere i mirtilli rossi (per una migliore distribuzione nell'impasto in cottura, passarli nello zucchero a velo).
Distribuire nei pirottini, pareggiare col pollice bagnato la superficie, e spolverarla di zucchero a velo.
Informare per c.ca 30 minuti in forno pre-riscaldato a 150° (nel mio caso, ventilato. Con forno statico sara' probabilmente necessario qualche minuto in più).
Ne risultano dei pasticcini burrosi e invernali, ottimi col tè.
Qualsiasi altro tipo di frutta e' ammesso !

Let's face it, it's no secret that I am a disastrous blogger.

Moreover, I arrive even to quote myself, like Hitchcock someway, mirroring myself in stainless steel while taking a picture of these cakes. Amateur.

I already made this same celiac-friendly mixture in a tartelette shape, inspired by a recipe, if I remember correctly, taken from the book Christmas by Donna Hay.
This time, fourteen muffin-size cakes will result; they arrived half-ignored in my office today, for a belated birthday celebration. Here are the ingredients :  


-150 g. butter
-100 g. caster sugar
-2 eggs + 2 yolks
-3 tbsp spelt flour
-250 g almond flour (I used almonds ground with a little sugar, this time)
-90 g cranberries candies
-1 teaspoon of vanilla extract
-2 tbsp icing sugar
-pinch of salt


Grind the almonds with a little sugar, mix it with the spelt flour, set aside.

Whip the two egg whites with pinch of salt, set aside.

Beat the egg yolks with the caster sugar until the texture will be foamy/silky, add the butter and whip-up, then combine to the mixed almonds with spelt flour, and vanilla. Mix well.

Finally, with a spatula, stir the whipped egg whites with the mixture, with a movement from the bottom to the top, and add the cranberries (for a better distribution in the dough, sprinkle them previously into powdered sugar).
Divvy up in to paper cases, flatten the surface with the help of your water wet thumb, and dust it with powdered sugar.
Put in the oven, pre-heated at 150°, for 30 minutes (in my case, ventilated oven. Static oven will likely need a few minutes more).
The result  is a wintry, buttery pastry, excellent with tea.
Any other kind of fruit is allowded !
